摘要
设计了一种基于感光耦合元件(Charge-coupled device,CCD)传感器的油炸薯片中丙烯酰胺含量的测定系统,通过测定不同煎炸时间薯片的双面像元电压值,发现薯片中丙烯酰胺含量与薯片双面像元电压值的平均值之间存在相关性(R2=0.975),其线性回归方程为y=35.399x+48.151。随机抽取市场上出售的6种不同品牌的薯片,获取其双面像元电压值的平均值代入方程计算得到丙烯酰胺含量,并通过标准化学方法测定薯片中丙烯酰胺含量,对比发现两者间的最大相对误差仅为4.75%,表明该方法可适用于油炸薯片中丙烯酰胺的快速测定。
A system of determining acrylamide in fried potato chips based on charge-coupled device (CCD) sensor was designed.A correlation between the average of double-sided picture element voltage and acrylamide contents in potato chips was found (R2 =0.975) and a linear regression equation was established y=35.399x+48.151.6.Different commercial potato chips were collected in market,their average of double-sided picture element voltage and acrylamide were detected.The results showed that the good coincidence between the CCD method and the standard chemical method was found.The maximum of relative error between them was 4.75%.It is indicated that the method is feasible for rapidly detecting acrylamide in fried potato chips.
