随着生活水平的日益提高,人们对猪肉的品质要求也相应提高。文章叙述了猪PSE肉发生原理及屠宰前后缓解的措施,为猪肉品质的改善提供理论依据和技术支持。
With the improvement of living standard,the required of pork quality is also increased.The principles of PSE pork and mitigation measures before and after slaughtering were discussed in this article. It would provide a theoretical reference and technical support for the improvement of pork quality.
