摘要
以椪柑渣为试验原料,采用响应面分析法建立酶法提取椪柑渣中可溶性膳食纤维得率的二次多项数学模型,验证了数学模型的有效性,并探讨了酶添加量、酶解温度、p H值和酶解时间对可溶性膳食纤维得率的作用规律,优化提取工艺参数。试验结果表明:加酶量4.0 m L/100 g,酶解温度50.0℃,p H值5.0,酶解时间8 h,该条件下SDF提取率高达32.53%。采用酶法提取椪柑渣中的可溶性膳食纤维是切实可行的。
Response surface methodology(RSM) was employed to optimize the process parameters of enzyme extraction of soluble dietary fiber(SDF) from ponkan pomace. The adequacy of the model equation for predicting the optimum response values was verified effectively by the validation. Effects of cellulase content, temperature, p H value and extraction time on yield of SDF were investigated. Maximum yield of SDF from the mathematical model was predicted to be 32.53% dry basis under the condition of cellulase content 4.0 m L/100 g, temperature 50.0 ℃, p H 5.0 and extraction time 8 h. Therefore, it was feasible to use enzyme method to achieve the extraction of the SDF from ponkan pomace.
