摘要 本文介绍油料在生产过程中受到污染,在仓储中滋生霉菌产生霉变和发热裂变。在加工过程中触油设备材质对油脂产生负面影响,油脂自身成分的变化,造成油脂质量不稳定和下降,有些毒素对人体危害极大,如反式脂肪酸、氯丙醇、n-3PUFA、缩水甘油酯、黄曲霉等,对此在油脂安全提出应采取检测和针对性防护措施。 The pollution of oil during production was introduced. Mould breeding from storage produces mildew and fever fission. The material of oil touching equipment during processing has negative effects on oil, the changes of oil itself lead to unstable quality and decline of oil. Some toxin has extremely harm to human body, like trans-fatty acids, chloropropanol, n- 3PUFA, glycidyl ester, aspergillus flavus, etc. As a result, the detection and pertinence protective measures of oil safety were raised.
