酵母菌发酵棉粕对黄羽肉鸡肌肉主要脂肪酸组成的影响 被引量:7

Effect of Dietary Fermented Cottonseed Meal on Main Fatty Acids Composition of Muscle in Yellow-feather Broiler

摘要 试验旨在研究酵母菌发酵棉粕对黄羽肉鸡肌肉主要脂肪酸组成的影响。选用180只21日龄健康的黄羽肉鸡,按照体重相近、公母各半的原则分为3组,每组6个重复,每个重复10只鸡。CG组为空白对照组,在基础日粮中加入6%未发酵棉粕;CT组和CF组分别添加6%的热带假丝酵母ZD-3发酵棉粕、热带假丝酵母和酿酒酵母复合发酵棉粕。结果表明:日粮中添加发酵棉粕可显著增加21-42日龄胸肌和43-64日龄腿肌中亚油酸含量(P〈0.05),对21-42日龄腿肌脂肪酸组成无显著影响(P〉0.05);与CG组相比,21-42日龄CF组胸肌油酸含量显著降低(P〈0.05);43-64日龄CT组胸肌油酸含量、不饱和脂肪酸/饱和脂肪酸的比值及腿肌亚油酸含量显著增加(P〈0.05),而胸肌硬脂酸和亚油酸及腿肌油酸含量显著降低(P〈0.05);CF组胸肌软脂酸含量显著增加(P〈0.05)。 This study was conducted to investigate the effect of fermented cottonseed meal(FCM)on main fatty acids composition of muscle in yellow-feather broiler. One hundred and eighty 21-day-age healthy yellow-feather broilers were randomly divided into three groups according to similar weight(male∶female=1∶1),and each group had six replicates with ten broilers. Group CT as control group was added 6% unfermented cottonseed meal in basal diet. Group CT and CF as treatment groups were added 6% of FCM by Candida tropicalis ZD-3 and FCM by Candida tropicalis ZD-3 plus Saccharomyces cerevisiae,respectively. The results showed that dietary FCM significantly increased linoleic acid contents of breast muscle from 21 to 42 days of age and leg muscle from 43 to 64 days of age in broiler chickens(P〈0.05). However,there was no significant difference in fatty acid composition of leg muscle from 21 to 42 days of age after adding FCM in diet(P〉0.05). Compared with group CG,oleic acid content in breast muscle increased significantly in group CF from 21 to 42 days of age(P〈0.05);During 43 to 64 days of age,the contents of oleic acid in breast muscle and linoleic acid in leg muscle and ratio of unsaturated fatty acid and saturated fatty acid were increased(P〈0.05),but the contents of stearic acid and linoleic acid in breast muscle and oleic acid in leg muscle were decreased in group CT compared with those in group CG(P〈0.05). In addition,palmitic acid content was increased in group CF than group CG in breast muscle during 43 to 64 days of age(P〈0.05).
