摘要
乳制品工艺学是食品科学与工程专业主干课程"食品工艺学"的核心内容之一,其课程教学具有独立性和代表性。将DIY-PBL法融入乳制品工艺学的课程教学过程中,旨在探索以学生为中心、以实践为中心、以问题为中心的创新模式。通过对教学效果及存在问题的分析研究,明确DIY-PBL法教学能达到学生自主学习、实践创新、综合能力培养的目的,适用于食品工艺课程体系的教学改革。
Food technology is the major course of food science and engineering. As one of its core chapters, dairy technology is relatively independent and representative during teaching process. To explore the innovation model focusing on students, practice and problem, the present work applied DIY-PBL method in dairy technology teaching, and the teaching efficiency and potential problem are analyzed. DIY-PBL method can improve the effect of students' autonomous learning and enhance the comprehensive ability of practice and innovation, which can be also used for the integral teaching reform of food technology.
