摘要
鲆鲽类营养价值高,做法花样繁多、各具风味,并形成了中国特有的鲆鲽类文化,有着广泛的市场需求。笔者综述了鲆鲽类的文化、种类、产业及加工利用方面的内容,并对提高鲆鲽类的经济价值,延伸鲆鲽类产业链进行了论述,为鲆鲽类的可持续性发展提供了参考。
Flounders with high nutritional value had many cooking methods in different flavor, and it formed Chinese unique fish-culture in popular demand. The culture, kinds, industry and processing utilization of flounder were outlined, and also in aspects of raising its economical value and stretching its industry chain in the paper. This provided reference for the sustainable development of flounder industry.
