Effect of Molecular Weight of Collagen Hydrolysates on their Properties

摘要 以猪皮明胶为原料,用酶解法制备了平均相对分子质量分别为47 k Da、18 k Da、9 k Da和3 k Da的四种水解胶原(CH),并考察了其凝胶性能、表面活性、吸湿保湿性能和抗氧化活性的差别。结果表明:CH的凝胶性能随着相对分子质量的减小而明显减弱,当相对分子质量为3 k Da时已很难形成凝胶;CH的表面活性和吸湿、保湿能力则随着相对分子质量的减小而增强;这四种CH的抗氧化能力均较弱,它们的ABTS、DPPH和羟自由基清除率以及铜离子螯合能力基本相同,还原能力则随相对分子质量减小而略有提高。 Four collagen hydrolysates (CH) with weight-average molecular weights of 47 kDa, 18 kDa, 9 kDa and 3 kDa were prepared by enzymatic hydrolysis of pigskin gelatin, respectively. Their differences in gelling property, surface activity, moisture absorption and retention, and antioxidant activity were investigated. The results indicated that the gelling property of CH significantly worsened with the decrease in molecular weight, and CH could hardly form gel when its molecular weight was less than 3 kDa. The surface activity and moisture absorption and retention of CH were improved with the decrease in molecular weight. The antioxidant activities of the four CHs were all weak. Additionally, their ABTS, DPPH and hydroxyl radical scavenging activities and chelating abifity to copper ion were similar, while their reducing ability slightly increased with the decrease in molecular weight.
