摘要
以鲶鱼下脚料为原料,研究丙酮、正丁醇、正己烷–异丙醇等有机溶剂对鱼油的萃取效果,并研究鲶鱼鱼油的贮藏稳定性.结果表明:正己烷–异丙醇法从鲶鱼碎肉中提取鱼油效果最佳,正己烷–异丙醇的体积比为3∶2,提取时间20min,反萃取时正己烷–异丙醇的体积比为7∶2时,提取率达到27.92%,且鱼油的感观质量较好;提取出的鱼油在0~4℃冷藏或添加100mg/kg VE后常温下贮存稳定性较高.经测定,鲶鱼鱼油的不饱和脂肪酸质量分数达到65.84%,必需脂肪酸的质量分数达19.96%,具有很高的营养价值.
To extract fish oil from catfish leftover,experiments were conducted with organic solvents such as acetone,butanol,hexane-isopropryl and so on. The result of the experiments showed that the best extraction method was with hexaneisopropryl. The volume rate of hexane-isopropryl in the first extraction was 3∶2,and in the second time 7∶2;the first extraction time was 20 min,the extraction rate was 27.92% and the extracted oil has better organoleptic quality. The stability of the fish oil was best when stored in 0-4℃ or in room temperature after adding VE 100mg/kg. This fish oil contented65.84% unsaturated fatty acid and 19.96% essential fatty acid,so it is valuable for human healthy.
