摘要
以可溶性干物质提取率为指标,对彝族雀嘴茶的浸提工艺进行研究,结果表明:彝族雀嘴茶粉碎后,采用固液比1∶9.35、浸提温度72.62℃、浸提时间25.48 min,能很大程度地提高可溶性干物质的含量,浸提效果最佳;通过对彝族雀嘴茶浸提浓缩液的调配试验,得出在纯净水中加入3.06%的彝族雀嘴茶浸提浓缩液、12.18%的白砂糖、0.13%的柠檬酸和1.72%的蜂蜜,饮料品质最佳。
Took the extraction rate of soluble dry matter as the index, investigations were made into the optimum conditons for Vaccinium dunalianum extraction, the results showed as follows: the extraction effect of the soluble dry matter was the best while the Vaccinium dunalianum has been crushed with the solid-liquid ratio 1 : 9.35, the extraction temperature 72.62℃ and the extraction time 25.48 min;the best prescription of Vaccinium dunalianum drink was obtained by central composite rotatable design, the adding dose of the concentrated liquid was 3.06 % ,sugar was 12.18 %, citric acid was 0.13 % and honey was 1.72 %.
