摘要
作为一种天然高分子化合物,壳聚糖具有良好的成膜性、无毒性、抗菌性等优点。近年来,壳聚糖复合保鲜剂被较多的应用于食品的保鲜。本文主要介绍了近几年来壳聚糖与其它材料配制成的复合保鲜剂在食品保鲜中的应用。
As a kind of natural polymer, chitosan has many advantages such as film-forming ability, non-toxic ability and antibacterial ability. Recent years, chitosan composite coating was widely used in food preservation. In the present paper, the application of composite coating prepared with ehitosan with other material in food preservation was introduced.
