摘要
[目的]优化益生菌混合培养富集锌的条件。[方法]以青春双歧杆菌ys01、德氏乳杆菌保加利亚亚种1.148 0和嗜酸乳杆菌ysh2混合培养富锌。通过单因素试验和中心组合试验对富锌条件进行优化。[结果]最佳富锌培养条件为:低聚果糖10 g/L、Zn2+0.41mg/ml、蛋白胨12.2 g/L、初始p H 6.0、接种比例3∶2∶1、接种量4.6%、培养时间72 h。在该条件下,青春双歧杆菌ys01、德氏乳杆菌保加利亚亚种1.148 0和嗜酸乳杆菌ysh2混合菌体锌的含量为550μg/g。[结论]以试验所得富锌混合菌体制备的富锌酸奶发酵剂具有良好的发酵性能。
[Objective] To optimize zinc-riching conditions by probiotics in the form of mixing culture. [Method] Bifidobacterium adolescentis ys01,Lactobacillus delbrueckii subsp bulgaricus 1. 148 0,and Lactobacillus acidophilus ys2 in the form of mixed culture were used to enrich zinc( Zn). The zinc enrichment conditions were optimized by single-factor and Central Composity design experiments.[Result]The optimal conditions were fructooligosaccharide 10 g / L,Zn2 +0. 41 mg / ml,peptone 12. 2 g / L,initial p H 6. 0,the inoculation proportion 3 ∶ 2 ∶ 1,inoculation amount4. 6% and culture time 72 h. In these conditions,the mass of zinc in the mixed cells of Bifidobacterium adolescentis ys01,Lactobacillus delbrueckii subsp bulgaricus 1. 148 0,and Lactobacillus acidophilus ys2 was 550 μg / g.[Conclusion]The zinc enrichment yogurt starter,which were prepared by the mixed cells,had good fermentation performance.
