摘要
火麻仁是一种使用历史悠久的药食同源植物,但因其含有一定量的大麻酚,使其在加工食品中的应用受到了一定程度上的质疑。从火麻仁的化学组成、功效作用及安全性等方面进行综述,充分证明火麻仁是非常优秀的食物来源及食品加工原料,还对存在的问题及未来的发展方向进行了讨论,为火麻仁资源的进一步开发利用提供了依据。
Hemp seed has a long history of drug use and also edible food source. However, owing to belonging to Cannabis sativa L., there is a certain amount of THC which is toxic component, so its application in food processing is restricted as a result. The research of hemp seed medicinal parts, chemical composition, pharmacological effects, side effects and other aspects are reviewed, proving that hemp seed is excellent food processing raw material and can be safely applied in modem food processing. It also points out the current problems in the field, and the future direction of development, providing a theoretical basis for the further advancement and utilization of hemp seed resources.
