摘要
微生物标准在保障食品质量安全方面起到了至关重要的作用。本文概述了中国与国际微生物标准委员会、欧盟、美国、加拿大、日本、澳大利亚、新西兰和中国香港的水产品微生物限量标准,通过比对分析提出完善中国水产品微生物标准体系的建议。研究发现,各国的水产品微生物限量标准不尽相同,中国可以借鉴国外先进的标准,同时要考虑自身的国情,开展相关的基础研究,制定科学合理的水产品微生物限量标准。
Microbiological criteria play an important role in ensuring the quality and safety of foods. The standards for microbiological limits for aquatic products in China, International Commission on Microbiological Specifications for Food, European Union, the United States, Canada, Japan, Australia and New Zealand, Hong Kong SAR were sum- marized in this paper. Based on the comparison and analysis of these microbiological limits, suggestions for improving the microbiological criteria of aquatic products in China were put forward. The comparison showed that the microbio- logical limits of aquatic products varied according to the different countries. Besides referencing the advanced stand- ards in foreign countries, the microbiological limits of aquatic products in China should be based on scientific studies proceeding from China' s actual conditions.
