摘要
湿法超细微粉碎技术是在超细粉碎技术基础之上发展起来的一种新型技术,在水果、蔬菜、大豆等食品中的应用得到了重大突破,该项技术成果填补了我国果蔬谷物加工生产技术的空白。鉴于此,本文从湿法超细粉碎技术的特点、设备种类、工作原理、国内外的发展现状及在食品加工中的应用等几个方面进行详细介绍,并分析该技术在今后的可能发展方向。
Wet ultrafine grinding technology is a kind of new technology, which based on the superfne crushing technology. The application in fruits, vegetables, soybean and other food got a major breakthrough. The achievements of the technology filled the gaps in processing of fruit and vegetable and grain in China. In view of this, the paper introduced the peculiarity, types of equipment, working principles, the situation of the domestic and foreign development and the application in food processing of wet ultrafine grinding technology in detail.
