摘要
红枣的物理和化学品质对于优良红枣的选育是至关重要的。为了比较不同产地不同品种红枣物理和化学品质的差异,以新疆的若羌灰枣、和田玉枣、哈密大枣,延川的条枣、骏枣,宁夏的中山枣为研究对象,对不同品种红枣的物理和化学品质进行了系统的表征。结果表明:从单枣重和可食部分含水量来看,和田玉枣最优;从果肉与果皮重量之比和可食率来看,条枣和骏枣相对较优,达到95%以上;从可溶性蛋白含量来看,条枣和骏枣相对较优;从VC含量来看,若羌灰枣最高,为581.3 mg/100 g鲜枣,其次是和田玉枣。不同品种物理和化学品质相差较大,在生产中应该培育具有较高品质的红枣品种。
Physical and chemical qualities of jujube are very important for cultivation of fine jujube.To compare the distinction of different kinds of jujube in different area,Xinjiang Ruoqianghui jujube and Hetianyu jujube ,Yanchuan Tiao jujube and Jun jujube ,Ningxia Zhongshan jujube were investigated in detail in the paper, respectively.Physical and chemical qualities of different kinds of jujube were characterized systematically.The results showed that the highest single fruit weight and the lowest edible water content were found in Hetianyu jujube.The highest ratio of pulp to peel and edible rate were observed in Tiao jujube and Jun jujube ,reached more than 95%.The Tiao jujube and Jun jujube had the highest soluble protein.The highest Vc content was determined in Ruoqianghui jujube,reached 581.3 mg per 100 gram fresh jujube.In turn was Hetianyu jujube.Physical and ckemical qualities had significant differences among different kinds of jujube,in production a higher quality of jujube varieties should be cultivated.
