摘要
以红豆和薏米为主要原料制成一种保健饮品。通过正交试验,确定最佳生产配比为:薏米与红豆汁的比例为1∶1,蔗糖含量1.5%、柠檬酸含量0%。对饮料的可溶性固形物、pH值、还原糖、金属元素等指标进行测定。结果为:可溶性固形物为10.85 Brix,pH值为6.39、还原糖含量为0.42%,Fe、Cu、Mn、Na、Ca、K、Mg、Zn的含量分别为0.0054、0.0008、0.0009、0.5433、0.0498、0.8008、0.4564、0.0157mg/L。
In this paper,red beans and coix seed were used to produce a kind of health beverage. With the help of the orthogonal test,the best formula was that red beans juice ： coix seed was 1 ∶ 1,sugar was 1. 5%,citric acid was 0%. The properties of beverage were tested. The results showed that the soluble solid was 10. 85 Brix,pH was 6. 39,reducing sugar was 0. 42%. The contents of metal elements of Fe、Cu、Mn、Na、Ca、K、Mg、Zn were 0. 0054,0. 0008,0. 0009,0. 5433,0. 0498,0. 8008,0. 4564,0. 0157 mg / L,respectively.
