利用酶制剂改善再造烟叶品质研究进展 被引量:11

摘要 再造烟叶原材料中含有较多细胞壁物质及蛋白质、淀粉等成分,填充再造烟叶的卷烟刺激性加大、香气降低,制约其应用。为解决这一问题,国内外科研团队从改进萃取技术、优化薄片原料结构、提高薄片内在品质以及加强设备研究等方面展开广泛研究,尤其是在利用生物酶制剂降解蛋白质等生物大分子方面取得较大进展。文章分析细胞壁物质、蛋白质和淀粉对烟草品质不利影响,总结国内外运用木质素酶、果胶酶、纤维素酶、蛋白酶和淀粉酶处理烟草的相关研究进展,为再造烟叶进一步研究、生产提供借鉴。 Some components such as cells wall, protein, and starch, made the reconstituted tobacco to be more irritation and aroma lose. It was the big problem to use the reconstituted tobacco broadly. To overcome this shortage, researchers had taken extensive studies about improving extraction technology,optimizing the formula of the sheet material, improving the intrinsic quality of the sheet and strengthening the equipment and using enzymes to degrade macromolecules such as proteins. The paper introduced the effect of protein, starch and cell wall material on the quality of tobacco sheet and the application of lignin,pectinase, cellulase, protease and amylase on tobacco sheet. The study will benefit for further research and production of reconstituted tobacco.
