2012—2014年永州市食品微生物检测结果分析 被引量:5

Analysis on Microbiological Detection Results of Foods in Yongzhou from 2012 to 2014

摘要 目的调查永州市各类食品微生物污染情况,为制定预防食源性疾病措施提供依据。方法按照国家食源性疾病监测工作手册进行食品采样和检测。结果 2012—2014年永州市检测11类共292份食品样品,总合格率为62.67%。3年总合格率分别为63.04%、61.22%和63.73%,差异无统计学意义(P=0.932)。2012年食品中菌落总数、大肠菌群和致病菌合格率分别为66.30%、83.70%和97.83%;2013年食品中菌落总数、大肠菌群、致病菌和霉菌合格率分别为62.24%、77.55%、95.92%和94.90%;2014年食品中菌落总数、大肠菌群和致病菌合格率分别为65.69%、87.25%和96.08%。其中婴幼儿辅助食品合格率最高,为85.67%,乳制品合格率最低,为53.33%。共检出致病菌10株、霉菌5株;分离金黄色葡萄球菌4株,单增李斯特菌1株,蜡样芽胞杆菌1株,副溶血性弧菌1株,铜绿假单胞菌3株。结论永州市食品微生物检测总合格率偏低,存在对健康安全有隐患的食品,应加强对各类食品微生物污染的监管和监测,采取一定的预防措施,防止食源性疾病的发生。 OBJECTIVE To investigate the microbial contamination of foods in Yongzhou in order to provide the basis for preventing the food-borne diseases.METHODS The food samples were collected and detected according to the National food-borne disease surveillance handbook.RESULTS It detected 292 samples of 11 kinds of foods from 2012 to 2014 and the total qualified rate was62.67%.The total qualified rate were 63.04%,61.22%and 63.73%respectively from 2012 to 2014 and there was no significant difference(P=0.932).The qualified rates of the total number of colonies,coliform bacteria and pathogenic bacteria in food were 66.30%,83.70%and 97.83%respectively in 2012.The qualification rates of the total number of colonies,coliform bacteria,pathogenic bacteria and moulds were 62.24%,77.55%,95.92%and 94.90%respectively.The qualified rates of the total number of colonies,coliform bacteria and pathogenic bacteria were 65.69%,87.25%and 96.08%respectively.The percent of pass was the highest(85.67%) in food of infants and young children and the percent of pass was the lowest(53.33%) in dairy products.It checked out 10 strains pathogenic bacterias and 5 strains molds.There were 4 staphylococcus aureus,1 strains listeria,1 bacillus cereus,1 deputy hemolytic strains of vibrio and 3 strains of pseudomonas aeruginosa.CONCLUSIONS The total qualified rate of food microbe was low and there were unsafe foods for people' s health.So it should strengthen the supervision and monitoring of all kinds of food microbiological contamination and take certain precautions in order to prevent the occurrence of foodborne illness.
