摘要
本文从武夷岩茶加工工艺对茶叶品质影响的角度,简述了岩茶的化学成分和构成岩茶品质的因素,对武夷岩茶加工技艺对岩茶品质的影响进行了阐述,在前人研究的基础上,对武夷岩茶茶叶品质化学进行回顾和展望。
The progress in the investigation of Wuyi rock tea quality was analyzed and reviewed in this paper. The mechanism of Wuyi rock tea quality was discussed from the following 3 spects:Tea chemical composition,Factors affecting Wuyi rock tea quality, The effect of Wuyi rock tea main manufacturing technology on the quality of Wuyi rock tea.The developmental prospect and the investigational tendency of tea quality in the future were discussed.
