摘要
以3-吡啶甲酸为原料,经酰氯化反应制成3-吡啶甲酰氯;再以亮氨酸为原料,经酰氯化后与乙醇反应生成相应的亮氨酸乙酯盐酸盐。在室温条件下,以三乙胺为缚酸剂,3-吡啶甲酰氯与亮氨酸乙酯盐酸盐经过酰化反应生成目标产物N-(3-甲酰吡啶)-亮氨酸乙酯。该化合物的结构通过1H NMR、13C NMR、IR和HRMS技术进行表征,并对其进行热裂解行为研究,分析鉴定出了39种裂解产物,多数为致香物质。对目标物进行卷烟加香评吸,结果表明该物质能改善卷烟吸味,减轻卷烟吸食刺激性,增强香气。
Using 3-pyridine carboxylic acid as raw material, 3-pyridine carbonyl chloride was obtained by acylation reaction. The leucine ethyl ester hydrochloride was synthesiszed from leucine and ethanol by acylation reaction. At room temperature, N-(3-formyl pyridine) leucine ethyl ester was prepared with 3-pyridine carbonyl chloride and leucine ethyl ester hydrochloride as raw materials, triethylamine as absorb acid agent. The structure of target product was confirmed by 1^H NMR, 13^C NMR, IR and HRMS spectra. The applications of this ester in cigarette flavoring were studied as well. Thirty-nine kinds of pyrolysis products were identified, they were almost aroma components. The sensory evaluation showed that the new compound could improve the cigarette taste and flavor, reduce smoking irritation.
