摘要
研究和建立水及水产品中微生物快速检测方法对人们的身体健康和食品安全风险控制有着重要意义。文章介绍了水及水产品中的主要病原微生物及其快速检测技术,其中包括微生物试纸片检测技术、PCR检测技术、等温扩增检测技术、多样性快速检测技术、生物传感器检测技术等。分析和梳理了各类快速检测技术的原理、优缺点及其应用,并对水及水产品中微生物快速检测新技术进行了展望。
It is important to establish a rapid detection technology of microorganisms in water and aquatic products for human health and food safety risk control. This paper introduced the main pathogenic microorganisms in water and a- quatic products and their rapid detection technologies, including microbial test paper detection, PCR detection, iso- thermal amplification, diversified rapid detection, biological sensor detection, etc. Afterwards, the principle, advan- tages, disadvantages, and applications of this technology were also analyzed. Finally, some new rapid detection tech- nologies were prospected for microorganisms in water and aquatic products.
