摘要
棕苞是一种健康美味的绿色蔬菜,含有丰富的植物多酚和膳食纤维等功能性成分,具有良好的保健价值,但整体的开发和利用水平比较差,对棕榈产业的发展产生一定的阻碍。结合前人的研究对棕苞的营养价值、保健功能和利用现状进行了简要介绍,并对棕苞的加工前景进行了展望,为棕苞的开发利用提供一定的依据。
Palm bud is a delicious and healthy green vegetable, contains rich plant polyphenols and dietary fiber and other functional compo- nents, with good health care value, but overall development and utilization levels are relatively poor,which have a certain obstacles on the palm in- dustry development. Combined with the previous studies,the nutritional value, health function and utilization status of the palm bud were briefly introduced,the processing prospect was forecasted,so as to provide a certain reference for development and utilization of palm bud.
