黄山地区居民地方特色食品摄入量及其与血压关系探讨 被引量:1

摘要 目的:了解黄山地区地方特色食品及特色茶的摄入情况,探讨地方特色食品摄入对高血压患病率的影响,为改善当地居民的营养搭配及健康状况提供科学依据。方法:利用方便抽样的方法,选取黄山市境内三区四县518户常住居民,每户选取1名40岁以上的家庭成员作为调查对象。问卷调查研究对象的人口学资料、疾病史等,并规范测量身高、体重、血压、腰围。采用食物频率问卷法记录调查对象1年的特色食品摄入频率和摄入量,再折算成标准人日摄入量。结果:黄山地区居民食用频率较高的地方特色食品是香菇、新鲜竹笋、火腿、咸肉、茶干、小烧饼、石头馃,每月3次及以上分别占46.1%、39.6%、44.8%、47.0%、39.6%、45.0%、38.4%,而毛豆腐和臭鳜鱼的食用频率并不高。结论:黄山地区居民食用的地方特色食品是香菇、新鲜竹笋、火腿、咸肉、茶干、小烧饼、石头馃,地方特色食品的摄入及饮茶与高血压可能无关。 [Ohjective] To understand intake of local characteristics food and characteristics tea in Mount Huang area, and explore the influence of local characteristics food intake on the prevalence of hypertension, to provide the evidence for the reasonable intake of local characteristics and improve the health status of residents. [Method] Using convenient sampling method, we selected 518 households residents of three districts and four counties in Huangshan city, each family selected a member whose age over 40 as the research objects . Questionnaire study of demographic data, medical history, etc. , and standardized measurement of height, weight, blood pressure, waistline. Using food frequency questionnaire survey, we recorded the frequency characteristics of food intake of a year, and then converted into a daily average intake and standard man days intake. [Result] Huangshan area residents had higher frequency of local specialty food in- cluding mushrooms, fresh bamboo shoots, ham, bacon, bean curd, small biscuits, and stone Guo. 3 or more times per month accounted for 46. 1% , 39. 6% , 44. 8% , 47.0% , 39. 6% , ,45.0% , 38.4% , respectiuely. Mao tofu and smelly mandarin fish consumption frequency was not high. [Conelusion] Huangshan area residents had higher frequency of local characteristics food including mushrooms, fresh bamboo shoots, ham, hacon, bean curd, small biscuits, stone Guo. There had maybe no relationship between local specialty food intake, drinking tea and hypertension.
