摘要
肉及肉制品由于其营养丰富、水分活度高在贮藏运输和消费过程中易发生腐败变质,因此研究肉品的保鲜具有重要意义。植物精油由于其抗菌等活性在肉品保藏中的应用已有报道,但国内研究还较少,因此就植物精油在肉品保藏中的应用进行综述,以期为植物精油作为肉品保藏的保鲜剂或保鲜材料的开发提供理论依据。
Meats and meat products were easily corrupted during storage, transportation and con- sumption for the high water activity and abundant nutrition. So it is very important to study meat preser- vation. Plant essential oil used in meat preservation had been reported because of its antibacterial activi- ty. But the domestic study was very few. Therefore, the application of plant essential oil in meat preser- vation was summarized. It was expected to provide theoretical supports for developing plant essential oil as preservative in meat preservation.
