浅谈博尔塔拉察哈尔蒙古民间“阿尔扎”奶酒的酿造工艺及蒙医学药用价值

摘要 "阿尔扎"奶酒为蒙古族传统二次蒸馏酒,用传统酿酒工艺将奶酒复蒸而成,为奶酒之上品,含有多种氨基酸及微量元素,在蒙医学中利用其防病、治病的药物辅助作用。作者参考蒙医学古籍及相关文献,对当地人民生活进行民俗习惯调查的基础上,介绍新疆博尔塔拉州蒙古族民间酿酒工艺,以及与内蒙古地区蒙古族民间酿酒工艺的不同,并结合所从事的专业探讨"阿尔扎"奶酒的蒙医学药用价值。 Milk alcohol Arza is twice distilled milk liquors.It is made bythe traditional technology way;it is regarded as the best drink among the milk alcohol.This milk alcohol contains a variety of amino acids and trace elements.In traditional Mongolian Medicine,it has auxiliary function as a medicine,usually,it is used to prevent and treat diseases.The author read a lot of historical resourcesand literatures on Traditional Mongolian Medicine,and he himself lived with the local people,accumulated a wealth experience,in order to present us the ferment technology of the Arza which are very popular among the Mongols in Boro-Tala,as well,to show us the different ferment technology of milk alcohol in Inner Mongolia.In the end,he gave his own statements on the value of the Traditional Mongolian Medicine which was based on his own subject.
