摘要
综述糙米、玉米、黑米、粟米、大豆、豇豆、绿豆、黑豆、荞麦及大麦等粮食发芽富集γ-氨基丁酸(GABA)的最佳条件,以及富含GABA的发芽粮食功能性食品的开发,以期为粮食深加工提供一些理论参考。
The GABA enriching process of germinated grain in brown rice,corn,black rice,millet,soybean,cowpea,mung bean,black bean,buckwheat and barley were reviewed. A review on development of GABA-enriched function food was made. It will provide a theoretical reference for the depth using of grain.
