摘要
模拟人体胃液条件下,采用分光光度法测定了山西老陈醋对亚硝酸盐的清除率以及对亚硝胺合成的阻断率,并与常用抗氧化剂BHT进行了比较。结果表明:山西老陈醋对亚硝酸盐具有较强清除能力,并可有效地阻断亚硝胺的合成。山西老陈醋对亚硝酸盐的清除率以及对亚硝胺合成的阻断率随其用量的增加而增大,其对亚硝酸盐的清除率最大可达93.88%,对亚硝胺合成的阻断率最大可达94.72%。山西老陈醋不仅可作为调味品食用,而且是一种具有防癌抗癌作用的天然保健品。
The scavenging rate of nitrite and the blocking rate of nitrosamine synthesis by Shanxi mature vinegar are determined by spectrophotometry under simulated human gastric juice,and compare with the common antioxidants(BHT).The results demonstrate that Shanxi mature vinegar has stronger scavenging capability of nitrite and can block the synthesis of nitrosamine effectively.The nitrite scavenging rate and nitrosamine synthesis blocking rate both show positive correlation with the dosage of Shanxi mature vinegar.The scavenging nitrite rate is 93.88%;the nitrosamine synthesis blocking rate is 94.72%.Shanxi mature vinegar is not only a condiment,but also a natural health product with anti-cancer capacity.
