摘要
以果脯厂废弃物(废糖液、果皮、果核)为原料酿造苹果醋,并结合浓缩苹果汁、蜂蜜、白砂糖、可溶性膳食纤维调配成高膳食纤维苹果醋饮料。最佳工艺配方为:苹果醋添加量为5%、蜂蜜添加量为3%、浓缩苹果汁添加量为10%、白砂糖添加量为5%、可溶性膳食纤维添加量5%。制成的苹果醋饮料酸甜可口、营养丰富,并具备保健作用。
Waste syrup, apple skin, apple core were used as raw materials to brew apple vinegar. A kind of apple vinegar beverage rich in dietary fiber was produced by apple vinegar, honey, concentrated apple juice, sugar and water soluble dietary fiber. As indicated in the experiment that the beverage produced was tasty and nutritional and had healthy care functions. The optimal recipe of apple vinegar beverage was apple vinegar5%, honey3%,concentrated apple juice10%, sugar5%, dietary fiber5%.
