摘要
为进一步开发利用冬竹荪,采用显色比色法、柱前衍生化-HPLC法测定冬竹荪中多糖和氨基酸的含量,并用氨基酸比值系数法评价其蛋白质营养价值。结果表明:冬竹荪中多糖含量为10.82%,冬竹荪的17种氨基酸中包含了8种必需氨基酸,氨基酸总量为8.72%,必需氨基酸总量为3.59%;必需氨基酸与氨基酸总量的百分比(E/T)为40.4%、必需氨基酸与非必需氨基酸的比值(E/N)为0.68;第一限制性氨基酸为蛋氨酸+胱氨酸,氨基酸比值系数分(SRC)为70.61。冬竹荪具有较高的营养价值,是一种极具市场和开发价值的食药两用真菌。
To further exploit and utilize P.impudicus,colorimetric method and pre-column derivatization RP-HPLC method were employed to determine polysaccharide and amino acid respectively,and protein nutritional value was evaluated by using the amino acid ratio coefficient method.Results:Content of polysaccharide in P.impudicus was 10.82%.The 17 kinds of amino acids determined contained eight kinds of essential amino acids.Meanwhile,the total content of amino acids was 8.72%,and the total content of essential amino acid was 3.59%.The ratio of essential amino acids to total amino acid(E/T)was 40.4%,and the ratio of essential amino acids to non-essential amino acid(E/N)was 0.68.The first restrictive amino acids in this fungus fruiting body were methionine and cystine,and the score of ratio coefficient of amino acid(SRC)was 70.61.Therefore,P.impudicus has extremely high nutritional value and market development value.
