摘要 目的确定葡萄树伤流液作为乳酸菌培养基培养乳酸菌的适宜性。方法将葡萄树伤流液作为乳酸菌培养基培养乳酸菌,并对所培养的乳酸菌的产酸能力、生长特点和情况进行了初步研究。结果葡萄树伤流液含有丰富的营养物质,适宜作为乳酸菌的培养基,pH值为4.75时乳酸菌的生长情况优于pH值为4.48。葡萄树伤流液含有产酸能力强、耐酸、耐高温低温和稳定性高的乳酸菌。结论葡萄树伤流液营养丰富,作为乳酸菌培养基是适宜的,对伤流液中乳酸菌的培养可以提高体系的稳定性。 Objective To determine the suitability of grapevine bleeding sap as a medium for culturing lactic acid bacteria.Methods-Grape bleeding sap was used as a medium of lactic acid bacteria.Then the ability of producing acid,growth characteristics and conditions were assessed.Results Grapevine bleeding sap contained rich nutrients.And it was suitable as a culture medium of lactic acid bacteria.At pH 4.75,the growth condition of lactic acid bacteria was better than at pH 4.48.Grapevine bleeding sap contained lactic acid bacteria,which had the ability to produce acid,good thermostability and high stability.The major lactic acid bacteria was the low cold bacteria.Conclusion Grapevine bleeding sap contained abundant nutritions.It was suitable to be used as a medium to culture lactic acid bacteria.And the stability of the grapevine bleeding sap could be improved in this way.
