面点制品中食源性过敏原控制探究 被引量:1

摘要 本文通过面点生产加工企业在加工制作过程中引入、污染食源性过敏原情况,提出针对食源性过敏原引入、污染,采取消除致敏物质,或降低其致敏性的控制方法,为食品企业食源性过敏原危害分析及其控制方法提供理论依据。
