摘要
酶促氧化EGCG形成脱氢聚酯型儿茶素A(DTSA)和聚酯型儿茶素A(TSA),然后研究DTSA和TSA的生成特性及稳定特性。结果表明:在酸性条件下,TSA的生成量一直在积累,而在中性和碱性条件下呈现先增大后减少的趋势。在酸性条件下DTSA和TSA较稳定,在中性和碱性条件下DTSA易于分解形成更多的TSA;随着温度的升高,DTSA和TSA的稳定特性变差,易于分解或氧化;具有还原性的Fe2+显著影响TSA和DTSA的稳定特性;而Cu2+、多酚氧化酶(PPO)和氧气对DTSA和TSA的稳定特性影响不显著。
The Formation and stability Characteristic of DTSA and TSA produced by oxidation of EGCG was studied.The results show that the amount of TSA is accumulated under acidic conditions, while TSA presents the tendency of increase first and reduction afterwards under neutral and alkaline conditions. DTSA and TSA are stable under the acidic condition, TSA is produced from DTSA under neutral or alkaline conditions. The stability of DTSA and TSA was negatively correlated with temperature. Significantly influence the stability of TSA and DTSA in Fe2 +aqueous solution.while Cu2+, polyphenoloxidase(PPO) and O2 affect the stability of DTSA and TSA were not significant.
