摘要
以河南特产资源香椿为试验材料,对2个不同产地红油香椿各部位废弃材料中黄酮、多酚、可溶性糖、可溶性蛋白含量进行分析研究,以期为香椿的综合开发利用以及功能性食品的开发提供理论依据。结果表明:红油香椿废弃材料中黄酮、多酚、可溶性糖及可溶性蛋白含量较高,不同产地红油香椿生物活性物质含量有明显差异,河南桐柏的红油香椿中黄酮、多酚、可溶性蛋白含量均高于河南中牟。同一产地红油香椿各部位间生物活性物质也有差别,叶中活性物质含量高于茎部。其中,河南桐柏红油香椿老叶中黄酮、多酚、可溶性蛋白含量最高,河南中牟红油香椿老叶中可溶性糖含量最高,而桐柏红油香椿老茎中多酚含量最低,中牟红油香椿老茎中黄酮、可溶性糖、可溶性蛋白含量最低。
In order to make full use of resource of Toona sinensis and provide theoretical basis for development and processing of functional foods,the contents of avones,polyphenols,soluble sugar and soluble proteins in different parts of Toona sinensis( old leaves and stems) from different areas were studied. The results showed that there were quite a few of avones,polyphenols,soluble sugar and soluble proteins in Toona sinensis old leaves and stems,and the contents of these bioactive substances of Toona sinensis collected from different areas had distinct difference. The sample picked in Tongbai had a higher content than that picked in Zhongmu. Even if the samples picked from the same areas,the contents in different parts were also different. The higher contents of these bioactive substances were found in leaves.Soluble sugar content was the highest in the old leaves of Zhongmu red cultivar,while avones,polyphenols and soluble proteins were the highest in the old leaves of Tongbai red cultivar. Meanwhile,polyphenols content was the lowest in the old stems of Tongbai red cultivar,while avones,soluble sugar and soluble proteins were the lowest in the old stems of Zhongmu red cultivar.
