摘要
以小麦制粉工艺中3B磨粉机磨下的麸片物料和普通麦麸为原料,采用挤压膨化技术,以膨化度为挤压膨化效果的考察指标,通过单因素和正交试验分析得到,各因素对小麦3B物料膨化度影响的主次顺序为:物料含水量>膨化温度>主机频率。最佳挤压膨化工艺条件:膨化温度为160℃,物料含水量19%,主机频率为20 Hz。经验证在此条件下3B物料的膨化度为1.54。用粉碎后物料过80目分样筛的过筛率来表现物料的粉碎效果,得出3B物料膨化度与过筛率呈现极显著相关关系,且膨化后物料的过筛率明显高于未膨化物料。因此初步认为膨化后的麦麸物料比未膨化的麦麸物料更易被粉碎,且膨化度高的麦麸物料粉碎效果更好,将膨化度作为指标来优化麦麸挤压膨化工艺有利于麦麸物料后期的粉碎。
The present study was to investigate the optimal extrusion processing and grinding properties of wheat bran from 3B milling roller in wheat flour milling processing and common wheat bran. Single factor and orthogonal experiments were carried out while the expansion ration as evaluation index. The result showed that the influence sequence of various factors on wheat 3B expansion ratio was material moisture, extrusion temperature, and screw speed-frequency. The optimum extrusion conditions were as follows: the extruded temperature of 160 ℃,material moisture content of 19% and screw speed-frequency of 20 Hz.,under which the3 B materiel expansion ratio was up to 1.54. Furthermore,when 80 mesh sieve was used as separating sifter,the sieving rate of expanded materiel was significant correlation to 3B materiel expansion rate,and the sieving rate after extrusion processing was significantly higher than that of no expanded materiel. It was suggested that the expanded wheat bran material was easier to be crushed than not expanded wheat bran,and the higher expansion ratio of the material,the better crushed effect. So using expansion ratio as evaluation index to optimize wheat bran extrusion technique was benefit to the later crush of wheat bran material.
