摘要
为研究无抗饲粮中添加微生态制剂对肥育猪胴体性状、体组分比率及肉品质的影响,选用60头60 kg左右的[杜×(长×大)]肥育猪,随机分成2个饲粮处理组,对照组饲喂无抗基础饲粮,试验组饲喂无抗基础饲粮+微生态制剂600 mg/kg,每组3栏,每栏10头(公母各半),饲喂42 d。饲养试验结束后,每栏选取1头体重相近的阉公猪进行屠宰。结果显示,胴体性状,试验组皮厚较对照组显著降低13.33%(P<0.05),其它指标两组差异均不显著(P>0.05)。体组分比率,与对照组相比,试验组板油率显著降低10.00%(P<0.05),脾重率和胰重率分别显著提高13.63%(P<0.05)和10.53%(P<0.05);其它指标两组差异不显著(P>0.05)。肉品质,与对照组相比,宰后45 min,试验组猪肉红度(a*)、黄度(b*)分别提高42.05%(P<0.05)、24.48%(P<0.05);宰后24 h,试验组猪肉b*显著增加15.17%(P<0.05)、贮存损失显著减少7.46%(P<0.05);其它指标两组差异不显著(P>0.05)。由此可知,肥育猪饲粮中添加微生态制剂600 mg/kg对猪胴体性状及肉品质具有一定的改善效果。
To study the effects of adding probiotics to anitibiotic-free diets on carcass, body composition ratio and meat quality in fattening pigs. A total of 60, body weight near to 60 kg, [Duroc×(Landrace×Yorkshire)] fattening pigs were randomly allotted to 2 groups with 3 sties per 10 pigs(5 ♂+5♀). The control group was fed basal diet without antibiotics, the experimental group was fed with basal diets containing 600 mg/kg probiotics,and the experiment period was 42 days. When it was over, one barrow with similar weight was selected to slaughter in each sty. The results showed that the skin depth was significantly decreased by 13.33% in experimental group(P〈0.05), but there were no significant differences in other indexes of carcass between two groups(P〈0.05). In the aspect of body composition ratio, compared with control group, the leaf fat rate was significantly decreased by 10.00%(P〈 0.05), the weight ratios of spleen and pancreatic were significantly increased by13.63%(P〈0.05) or 10.53%(P〈0.05) respectively in experimental group. In contrast to control group, 45 minutes after slaughter, the redness and yellowness were significantly improved 42.05%(P〈0.05) or 24.48%(P〈0.05) respectively, and 24 hours after slaughter, the yellowness was significantly increased by 15.17%(P〈0.05) and drip loss was significantly decreased by 7.46%(P0.05) in the experimental group(P〈0.05). It can be concluded that adding 600 mg/kg probiotics to diet can ameliorate the carcass traits and meat quality of fattening pigs.
