摘要
提出使用精密色差仪测定板栗果实色差,从而快速、准确地评价板栗的果实褐变程度。并使用精密色差仪对7个品系的栗果煮熟前后的褐变程度进行了测定,结果显示,H7-1和D3-21的△L值变化较小,褐变程度较低;D7-65褐变程度最高。并将采用传统分光光度计比色法测定的栗肉褐变程度与利用精密色差代测定的栗肉色差指标值进行了相关性分析,结果显示,可以利用精密色差仪测定的△L值准确评价板栗的褐变程度,当果肉偏绿色时以△a值为辅助指标。
The new method for measuring browning of chestnut using the precise color reader was pro- posed, in order to quickly and accurately evaluate the degree of browning on the surface of chestnut. The degree of browning of 7 chestnut varieties were determined using the precise color reader. Analysis of data obtained that the changes of the values of A L were shown to be less, and the degree of browning of H7- l and D3-21 were lower. The degree of browning of D7-65 was the highest. The correlation analysis on the degree of browning measured by colorimetric method of traditional spectrophotometer and precise color read- er was conducted. These results indicated that the precise color reader can be accurately determined the degree of browning on chestnut by the value of △L, when the color of chestnut surface was closed to green, the value of Aa as auxilial7 index.
