摘要
文章通过对广州市消费者的食品安全风险感知问卷调查,运用探索性因子分析与结构方程模型找出影响消费者对食品安全风险感知的因素.研究结果发现:消费者对食品的"卷入程度"不能直接影响其风险感知;消费者的"情绪因子"与"风险态度"是正向影响风险感知的,且"情绪因子"是最主要影响因素;对政府和企业的"信任程度"能让消费者放下戒备心理,放心购买食品,降低其感知的风险.
The thesis is based on a questionnaire about the consumer perception on food safety risks in Guang- zhou, and attempts to figure out the relevant factors by Exploratory Factor Analysis and Structural Equation Mod- eling. The results indicate that: "the involvement of food" doesn' t have direct influence to consumer perception on food safety risks; "the emotional factor" and "risk attitude of consumers" have a positive influence to risk perception ; "the emotional factor" is the major factor; and "trust" on the government and enterprise can let the consumers' psychological defense down, thus reducing the risks perceived in the course of purchasing food products.
