摘要
甘油二酯作为一种多功能添加剂,在食品、药品、化妆品行业等具有广泛的用途。鸭油中含有较多的不饱和脂肪酸,利用鸭油中的不饱和脂肪酸制备的甘油二酯具有减少脂肪积累,降低体重,提高机体抗氧化能力等功能,其应用前景更加广阔。因此,研究鸭油甘油二酯对脱脂奶粉的稳定性影响,不仅可以提高其稳定性,还可以增加脱脂奶粉的香味。研究鸭油甘油二酯对脱脂奶粉的稳定性研究,通过冷冻干燥法制备脱脂奶粉,研究不同甘油二酯的添加量,不同水温,不同加水量和不同搅拌时间4个单因素方法对脱脂奶粉的冲调性,分散性,吸湿性和流变性的影响,为冷冻干燥法工业化生产脱脂奶粉提供了理论参数。研究结果表明:甘油二酯添加量和搅拌时间对甘油二酯脱脂奶粉的分散性和冲调性有显著性影响。利用响应面法优化的鸭油甘油二酯脱脂奶粉最佳工艺条件为:温度55℃,加水量为75m L/10g,搅拌时间61min,甘油二酯添加量为2.24%时对脱脂奶粉的稳定性最好。
Diglycerides has a wide range of usage in food, medicine, cosmetics and other industries. Duck oil contains lot of unsaturated fatty acids which can be used in preparing Diglycerides. Diglycerides produced by duck oil has its specialty of reducing fat accumulation, reducing weight and improving body antioxidant capacity and has wider application prospects. The stability study of duck oil diglycerides in skim milk can also improve the skimmed milk powder flavor. Skimmed milk powder was prepared by freeze-drying. Different amount of Diglycerides, different water temperature, different amount of water and different mixing time on the effect of milk properties such as soaking, dispersion, hygroscopicity and theological properties were studied. It provided theoretical references for freeze-drying method in industrial production of skimmed milk powder. Results show that the addition of diacylglycerol and mixing time of diacylglycerol has significant influence on the dispersion property and impulse property of skimmed milk powder. Response surface methodology was used to optimize the duck oil diacylglycerol skimmed milk powder, the optimum technological conditions were. 55 ℃, water amount 75mL/10g, mixing time 61 min, diacylglycerol content 2.24%. The skimmed milk powder had the best stability under the above conditions.
