摘要
糌粑是新疆蒙古族日常饮食不可缺少的传统面食之一,其手工制作技艺至今仍在其生活中较为完整地保存,在现有文献中,对其制作工艺考察记录者却尚未见到,致使时人对这种面食制作技艺缺乏更多的了解和认识。全程纪录新疆蒙古族牧民制作糌粑的调查,毫无疑问是对这一传统手工制作技艺的有效保护和传承。
Zanba is an indispensable part of traditional pasta in the daily diet of Mongolians in Xin-jiang. Its craftsmanship is still well preserved nowadays in the natives life. However, there is no record of it in present documents, so people have little knowledge of the craftsmanship. A survey of a full recording of Xinjiang Mongolian herdsmen making Zanba, which without doubt is an effective protection and inheritance of the craftsmanship.
