摘要
电子鼻和电子舌是模仿哺乳动物嗅觉和味觉而制成的智能感官检测仪器。介绍了两者的基本原理和模式识别方法,对目前电子鼻和电子舌在葡萄酒品质检测中的应用现状进行概述,并对电子鼻和电子舌今后的研究前景进行了展望。
Electronic nose and electronic tongue are intelligent sensory testing instruments which are made by imitating the smell and taste ofmammals. In this paper, their basic principles and pattern recognition methods were introduced. Besides, their application status in quality de-tection of grape wine at present was summed up, and their research prospects in the future were discussed.
