摘要
以粉红期的达赛莱克特草莓为试材,分别在常温(25℃)和低温(4℃)条件下进行贮藏,研究贮藏过程中草莓呼吸速率、花青苷含量以及活性氧代谢等指标的变化,并对这些生化指标的相关性进行了分析。结果表明,随着贮藏时间的延长,草莓的呼吸速率呈先下降后上升趋势,O2-·产生速率、花青苷含量和MDA含量呈增加趋势,超氧化物歧化酶(SOD)活性呈先升高后降低趋势;低温(4℃)能降低草莓的呼吸速率和O2-·产生速率,减少花青苷和MDA含量,使SOD活性和类黄酮含量保持较高水平,从而延缓果实衰老;草莓花青苷合成与O2-·产生速率和MDA含量均呈极显著的正相关(P<0.01)。
The changes of respiration rate, anthocyanin content and reactive oxygen metabolism in harvested pink-stage strawberry(Fragariananassa Duch. cv. Darselect)fruit under different temperatures(25,4 ℃)storage were studied, and the correlations among the related biochemical parameters were analyzed. The result showed that as the storage time prolonged,the respiration rate showed a decreased trend at first and then increased, the O2-· production rate, anthocyanin and MDA content increased, while SOD activity increased at first and then decreased in strawberry fruit. Low temperature at 4 ℃ storage decreased the respiration rate and O2-·production rate, and reduced the contents of anthocyanin and MDA, kept higher SOD activity and flavonoids content, thus postponed the fruit senescence. A significant positive relationship existed in anthocyanin content and O2-·production rate, as well as in anthocyanin content and MDA content.
