摘要
研究了光照、时间、pH、温度、各种金属离子等对菊芋花色素稳定性的影响,并用灰色识别模型计算了各个因素和吸光度的关联度,得到各影响因素对菊芋花色素稳定性的影响程度.该研究为菊芋花色素的开发和利用提供了理论依据.
This paper studies different factors' influence on the stability of artichoke flower pigment, these factors are light, temperature, time, pH and all kinds of metal ions. Based on the above, this study calculates the correlation factors and the absorbance with grey identification model, and gets the stability degree of being affected by various factors. This study provides a theoretical basis for develo- ping and utilizing artichoke flower pigment.
