餐饮消费者食品安全认知度与满意度调查研究——以福州市为例 被引量:2

摘要 以福州市餐饮消费者为对象,对消费者的食品安全认知度和满意度进行随机调查,结果表明消费者非常担忧食材中农药、兽药残留超标,使用不新鲜、伪劣的食材,违规添加食品添加剂等食品安全风险因素,餐饮消费者的整体满意度偏低,餐饮业食品安全满意度还有较大的提升空间,餐饮企业应严格履行依法经营的各项要求,加强诚信服务和食品安全管理,政府部门应当发挥食品安全监管的主导地位,加强餐饮业食品安全的监管力度,提升消费者安全感,促进餐饮业的健康发展。 Targeted on the catering consumers in Fuzhou, random survey is conducted to evaluate the recognition and satisfaction on food safety. Results shows that among the food safety risk factors, consumers are very concerned about pesticide and veterinary drug residue exceeding in food ingredients, inferior food ingredients and illegal food additives. The general satisfaction on catering food safety is low, there is great potential for improvement in food safety. Catering enterprises should strictly comply with requirements of business operations, strengthen the integrity of the service and food safety management. The government should strengthen the safety supervision on catering food, improve consumer ' s sense of security on food safety, and promote the healthy development of the catering industry.
