摘要 随着扫描电子显微镜技术的发展,它已经被成功地应用于医疗、环境、生物、食品研究等各个领域,成为不可缺少的高科技辅助研究技术之一。近年来,越来越多的研究者们将它应用于果蔬保藏方面,以观察果蔬贮藏期内的组织表面形态变化以及微生物侵染果蔬表面过程。文章主要介绍扫描电镜在果蔬采后病害防治及鲜切果蔬保鲜两方面的应用现状,供未来研究者们研究果蔬保鲜及加工做参考。 With the development of scanning electron microscope technology,it has been successfully applied in the field of medical,environmental,biological research and so on. It has become one of the high-tech assistant research techniques. In recent years,more and more application are used in fruits and vegetables in order to observe the morphological change in tissue surface and process of microorganisms infecting fruits and vegetables. In this paper we discussed the application of SEM in control of postharvest disease and the storage of fresh-cut fruits and vegetables to provide references about fruits and vegetable fresh-keeping and processing.
