摘要
[目的]水稻是我国主要粮食作物之一,消费者对大米食味品质的追求日益提高。为系统、全面地了解目前大米食味品质的研究及其育种进展。[方法]通过查阅大量国内外相关文献资料。[结果]综述了稻米食味品质的影响因素、评价方法及相关检测技术,总结了当前我国优质食味水稻的育种方法及育种成效,分析了这些方面存在的不足,并提出对未来相关研究的展望。[结论]为我国改良稻米食味品质提供了科学的理论基础,同时也为其他作物如杂粮食味的品质研究提供借鉴。
[Objective]Rice is one of the main grain crops in China.The persuit of rice eating quality from customers is increasing day by day.To understand the research and breeding progress of the eating quality of rice systematically and comprehensively.[Methods]this paper referred to a large number of related literature include domestic and international.[Results]Then the paper reviewed the influence factors of rice eating quality,evaluation method and related testing technology.Meanwhile,the review summarized the current breeding methods and breeding results of high eating quality of rice in China.Through the analyses of the deficiency existing in these aspects,we also presented the prospect of the related studies.[Conclusion]The results of the research provided scientific theoretical basis for the improvement of rice eating quality in China,as well as reference for other crops such as the research on eating quality of minor crops.
