摘要
核桃是常见的坚果之一,在中国因产量丰富,种植面积广而闻名。核桃仁是核桃的主要食用部分,因其含有丰富的脂质、蛋白质、糖类和矿物质等,被封为"四大坚果"之一,因此深入探究核桃的成分和活性就变得尤为重要。文章结合已有的文献和成方探讨核桃仁的成分及多种药理作用,综述了核桃仁中的主要成分脂质,蛋白质,碳水化合物等的提取方法,及不同成分的功效,实验证明核桃仁有抗氧化、健脑保健、抑菌、抗肿瘤、抗疲劳、增强抵抗力及降血糖等功效。为进一步研究开发利用核桃资源提供了思路和方法。
Walnut is one of the common nuts,which is famous for its abundant production and extensive planting area in China.Walnut kernel is the main edible part of the walnut.because of its rich lipid,protein,polysaccharide,minerals,etc.,was called one of"the four large nuts",thus further to explore the components and activity mechanism of walnut becomes especially of significance.In this paper,the methods of extraction of lipid,protein,carbohydrate and other components of walnut kernel were summarized,based on the existing literature to explore the components of walnut and a variety of pharmacological effects.Experiment showed that walnut kernel has the effect of anti-oxidation,brain care,antibacterial,anti-tumor,anti-fatigue,enhancing resistance and lowering blood sugar.It provides a way for further research and development of walnut resources.
