摘要
对国内黑米发酵乳和发酵饮料的种类和工艺配方进行了综述。对黑米发酵乳和发酵饮料目前的状况与发展前景进行了分析,以期为黑米发酵乳和发酵饮料的研究提供一些理论参考。
The types and process formula of black rice fermented milk and fermented beverage were reviewed. The current situation and development prospect of black rice fermented milk and fermented beverages were also analyzed,in order to provide some theoretical reference for the research of black rice fermented milk and fermented beverage.
