摘要
论述了植物油库储油过程中储藏环境、油脂脂肪酸组成、精炼程度、抗氧化剂、金属离子、水分及人员操作等因素对油脂品质的影响。提出了植物油库储油过程中的控制要点,有助于采用恰当的方法抑制油脂的氧化变质,延长产品的保质期。
The effects of storage environment, fatty acid composition of oil, refining degree, antioxidant, metal ions, water and personnel operation on the oil quality during storage in vegetable oil depot were discussed. The control points in process of oil storage in vegetable oil depot were proposed, which was helpful to inhibit the oxidation degeneration of oils and extend the shelf life of products by suitable methods.
