糙米储藏过程品质劣变机制及储藏技术研究进展 被引量:8

摘要 稻谷是我国主要的粮食作物之一,也是我国重要的储备粮品。一般认为采用糙米为主的储藏形式替代传统的稻谷储藏,不仅可以节省大量的仓容,还可以降低运输成本;但糙米储藏技术难度大,要求高。因此,研究糙米的安全储藏技术以及储藏过程中糙米的品质变化规律,对确保糙米品质有着非常重要的意义。主要综述了糙米在储藏过程中的品质变化及机制,展望了我国糙米储藏研究的未来发展方向,以期为我国糙米安全储藏提供技术参考。 Rice is one of the main food crops in China, and is also an important reserve grain crop. Generally, the main storage form of brown rice instead of the traditional rice storage, not only can save a lot of storage capacity, but also reduce transportation costs, but brown rice storage techniques is difficult and demanding. Therefore, it is very important to study the safe storage of brown rice and the change of quality of brown rice during storage, so as to ensure the quality of the brown rice. We reviewed the quality change of brown rice during the storage process and quality deterioration mechanism, and looked for- ward to the direction for the future development of brown rice storage in China, expecting to provide technical references for the safe storage of brown rice.
